Decadent Chocolate Raspberry Cake
This beautiful layered cake is bursting with chocolate flavor and fresh raspberries, perfect for any celebration!
Ingredients:
Cake:
1 ¾ cups all-purpose flour
¾ cup unsweetened cocoa powder
2 cups granulated sugar
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
½ cup raspberry jam
Raspberry Frosting (Optional):
1 cup unsalted butter, softened
3 cups powdered sugar
¼ cup raspberry jam
2-3 tablespoons milk

Instructions:
Preheat your oven to 350°F (175°C) and grease two round cake pans.
Whisk dry ingredients: In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Combine wet ingredients: In a separate bowl, whisk together eggs, milk, vegetable oil, and vanilla extract.
Mix batter: Slowly add the wet ingredients to the dry ingredients, mixing until just combined.
Add hot water: Gradually add the boiling water to the batter, mixing until smooth.
Bake the cakes: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cool completely: Let the cakes cool completely on a wire rack before frosting.
Raspberry Frosting (Optional):
Cream butter and sugar: To make the frosting, cream together the softened butter and powdered sugar until light and fluffy.
Beat in jam and milk: Beat in the raspberry jam and milk until smooth and spreadable.
Assembly:
Frost one layer: Once the cakes are cool, frost one layer with raspberry frosting.
Stack and frost: Place the second layer on top and frost the entire cake.
